Join a self-led group of seniors every Friday at the


  • PCO's Dr. Kosek shares his recipe for a delicious Winter Garden Salad. Try it today and enjoy the winter's last root vegetables before they're replaced by springtime berries and produce at your local market!

    For the salad:
    -1 lb mixture of root vegetables such as beets, rutabagas, turnips, carrots and parsnips.
    - 8 oz kale
    - 1 Tbsp olive oil
    - salt (to taste)

    For the dressing:
    -1/4 cup olive oil
    - 1 lemon
    - 1 Tbsp honey
    - 1 Tbsp Bragg Liquid Aminos or tamari saouce
    - 3 Tbsp sunflower seeds

    Clean and julienne cut the root vegetables. Lightly coat with olive oil, sprinkle with salt and roast for 30 minutes at 350 degrees or until just browned. Cool for 30 minutes.

    Clean kale and finely chop. Add to roasted root vegetables.

    Mix dressing ingredients, toss to cover vegetables.
